Title: NOW, THEREFORE BE IT FURTHER RESOLVED that the Council of the City of Pittsburgh does hereby recognize Jason Capps for carrying on the Italian culinary traditions of the Capps and Greco Families through his entrepreneurial pursuits and congratulates him for establishing and promoting the farm to table concepts of the green food industry and the Green Restaurant Association; and, BE IT FURTHER RESOLVED that the Council of the City of Pittsburgh does hereby declare Tuesday, October 4, 2011, to be “BELLA SERA URBAN TRATTORIA DAY “ in the City of Pittsburgh.

WHEREAS, the Green Restaurant Association is a national non-profit organization that was founded in 1990 with the mission to create an ecologically sustainable restaurant industry through research, consulting, education, marketing and community organizing; and,
WHEREAS, when Jason Capp, owner and chef of Bella Sera Urban Trattoria, opened his restaurant, it was not his first venture into the green food service industry as his family has been in the restaurant business since the 1940's and his banquet facility in Canonsburg was Pennsylvania's first green catering and banquet hall certified by the Green Restaurant Association in 2006 ;and,
WHEREAS, Jason Capp opened Bella Sera Urban Trattoria in Market Square in November 2009 , making it Pittsburgh's first green certified restaurant ;and,
WHEREAS, in order to become certified, Bella Sera started a comprehensive recycling program, composting and reducing their landfill waste by 25%, eliminating the use of Styrofoam and installing energy-efficient motion sensors, hand dryers, aerators, low-flow bathroom and kitchen faucets; and ,
WHEREAS, in addition to growing basil , cucumbers, herbs and other vegetables on his own farm in Washington, Pa, Jason and his  Bella Sera chefs have relationships with local farmers, purchasing foods  grown in Western PA  without the use of toxic chemicals.
