Title: NOW, THEREFORE BE IT RESOLVED, that the Council of the City of Pittsburgh does hereby commend Trevett and Sarah Hooper for their dedication to sustainable food systems, promoting equality, and creating a model workplace and celebrates Legume's decade of success; and, BE IT FURTHER RESOLVED, that the Council of the City of Pittsburgh does hereby declare Wednesday, May 17th, 2017, to be "Legume Bistro 10th Anniversary Day" in the City of Pittsburgh.

WHEREAS, in 2007, a small restaurant opened simply in Regent Square under Trevett and Sarah Hooper's leadership; and,

WHEREAS, in 2011, Legume moved to Craig Street in North Oakland and tripled in size, and later, added a bar and burger joint, known as Butterjoint; and,

WHEREAS, Legume is highly regarded by local and national media, including the New York Times, Thrillist, Eater Magazine, the Wall Street Journal, and NPR, and Legume has a portfolio of countless accolades, nominations, and awards; and,

WHEREAS, in addition to the rotating menu of delightful entrees, Legume hosts events to celebrate great food seasonally with solstice gatherings, lobster boils, and cheap date nights while making from scratch cheeses, jams, breads, dry-aged meats, sauces, vinegar, dandelion wine, shrubs, bitters, and pickled vegetables and offering workshops to teach these techniques; and,

WHEREAS, in owner and Chef Trevett's own words: Legume is "a creative stomping ground for thoughtful restaurant workers to find out who they are as people and professionals before they go on to do something special themselves." Thoughtful and talented people who sharpened their figurative and literal knives in Legume's kitchen include Neil Blazin and Justin Vetter of Driftwood Oven, Bek Hlavach of Sweet Peaches and Billet & Bloom, Rafael Venzio of Aubergine in Smallman Galley, Jamilka Borges of Bar Marco and Spoon, Brian Wiltrout and Linsday McKee of Three Cheers Farm, and Caroline Matys of Eleven; and,

WHEREAS, Legume fosters a work environment that measures profitability not merely in dollars but also in creativity, community, work-life balance, and the restaurant has offered healthcare to employees years before being required to do so; and,

WHEREAS, Butterjoint makes monetary commitments to the local non-profit community by donating tips once a month to a worthy organization with their 'Donations and Libations' series; and,

WHEREAS, simultaneously celebrating 10 years and plan...
