Title: NOW, THEREFORE BE IT RESOLVED that the Council of the City of Pittsburgh does hereby recognize the ongoing contributions that Anthony Falcon has made to the cuisine of Pittsburgh and the cultural vibrancy of the Strip District; and, BE IT FURTHER RESOLVED that the Council of the City of Pittsburgh does hereby declare May 18, 2015, "Anthony 'Gaucho' Falcon Day" in the City of Pittsburgh.

WHEREAS, Anthony "Gaucho" Falcon opened Gaucho Parilla Argentina in the Strip District in February 2013 at the urging of his uncle Sergio Falcon, seeking to bring authentic Argentinian cuisine to the already diverse Strip District food scene, and expand the cultural and ethnic representation of the vibrant neighborhood markets; and,

WHEREAS, Anthony's restaurant is a celebration of his heritage, as his great-grandfather Don Antonio Falcon was a gaucho, or cowboy, in Argentina, often cooking over a wood-fired parrilla, or grill, a method of cooking which has a deep-rooted tradition in Argentine culture as gauchos often grilled meat over a wood-fueled campfire and a method Anthony himself practices expertly in his restaurant, utilizing his education at the former Pennsylvania Institute of Culinary Arts and his deep understanding of Argentina's unique flavors; and,

WHEREAS, Anthony has been an active participant in Pittsburgh's Latino community, proudly participating in Kennywood's first-ever Latino Day and as a member of I Believe in Pittsburgh, an organization which advocates for cultural activities and the many backgrounds of Pittsburgh's historically diverse residents; and,

WHEREAS, Anthony has poured his heart, soul, and resources into a renovation of his restaurant, hoping to further solidify Gaucho Parilla Argentina as a fixture of Pittsburgh's food scene and as a cultural landmark for the colorful and delicious cuisine that caters to the many Latino customers who enjoy the Strip District; and,

WHEREAS, Pittsburgh is proud to boast so many cultural and ethnic backgrounds, and Anthony represents a wealth of Argentinian culture that is valued by residents, visitors, and fellow chefs around the city of Pittsburgh.
