WHEREAS, the City of Pittsburgh has begun garnering national attention for its burgeoning restaurant scene, and;
WHEREAS, this growth of an inventive and unique restaurant community throughout the City of Pittsburgh provides an increasingly essential contribution to the cultural, social, and economic progress of the City and its residents, and;
WHEREAS, Chef Justin Severino has worked to exemplify Pittsburgh's new culinary culture, dedicating himself to promoting and incorporating ethical farming techniques, humane animal husbandry, and sustainable cooking methods, and;
WHEREAS, Chef Severino's Lawrenceville restaurant, Cure, specializes in utilizing these practices in a variety of creative and innovative ways, providing house-made charcutiere and locally-sourced seasonal dishes supporting area farms and other local purveyors, and;
WHEREAS, Chef Severino's emphasis on locally-sourced ingredients allows for increased culinary co-operation and regional sustainability, and;
WHEREAS, Cure was named one of the 50 best new U.S. restaurants of 2012 by Bon Appetite magazine, and;
WHEREAS, this national recognition of the Pittsburgh dining scene serves to promote Pittsburgh restaurants, and the City itself, on the national stage, adding to Pittsburgh's increasingly positive national and global image, and;

NOW, THEREFORE, BE IT RESOLVED, that the Council of the City of Pittsburgh does hereby congratulate and honor Chef Justin Severino and his staff for their service to the City of Pittsburgh, both in terms of Cure's culinary and cultural contribution to the City, as well as in relation to Chef Severino's dedication to the promotion and support of locally-sourced and sustainable food resources throughout the Pittsburgh region,
BE IT FURTHER RESOLVED, that the Council of the City of Pittsburgh does hereby declare Tuesday, September 4th, 2012 "Chef Justin Severino and Cure Day" in the City of Pittsburgh.
